Confetti Cookies

Hello gorgeous people’s of the tube and interweb….. How’s your post Easter Chocolate over load going, surely I’m not the only one binging on the Mini Shuiligans Eggs hoping they wont notice. What to do with all the left over chocolate I hear you say…..Baking Krispie Cakes (that’s original)

Nope after ten hour shift at work I had brain wave, maybe not my finest moment but I thought you know what  we need more Confetti/Hundreds & Thousands & make some Confetti Cookies why not!!! I’ve seen Confetti Cupcakes no I’ll be awkward & wrangle the Mini Shuiligans for some late night baking!

For said cookies you will need; Step One Mix 1 egg, 1/2 cup of softened butter, 3/4 cup of sugar, 1 egg, 1 & 1/2 teaspoon of vanilla extract until light & fluffy (oh the fluffiness) Step Two Add in 1 & 1/2 cup of plain flour, 2 teaspoon Corn Starch, 3/4 teaspoon baking soda & buckets I MEAN BUCKETS of Sprinkles. I find the Dr. Oetkers Neon Sprinkles work perfectly. Step three let chill in the fridge for 2hrs or 5 days if you think if you have the resistance! Preheat the oven to Gas Mark 4 for 8 max 9 mins and let them little stud muffins chill!!!!
